Do we have to move everything to the cloud at once?+

No, and most businesses should not. A staged approach moves one workload at a time — often backup or email first — so each step can be verified before the next begins.

What is the difference between cloud hosting and colocation?+

With hosting you rent computing resources and never touch hardware. With colocation you keep your own servers but house them in a facility with resilient power, cooling and network connections.

How do we know our backups actually work?+

By restoring from them on a schedule. A backup that has never been restored is an assumption, so recovery testing should be part of the agreement from the start.
